Ingredients :

  • Mackerel/Rainbow Trout/Seabass each weighing about 300g - 2
  • Garlic - 5 big cloves - crushed
  • Lemon juice - 3 tblsp
  • Olive oil - 2 tblsp + 2 tblsp while grilling
  • Ground pepper - 1 tsp for medium spicy or 2 tsp for bit more spicy
  • Chopped coriander/parsley leaves - 1 tblsp
  • Red chilli - 1 (optional)
  • Salt - to taste

Method :
  1. Deseed the chilli and cut it into small pieces; Chop coriander/parsley leaves.
Slit the fish few times on both sides.
  2. Combine crushed garlic, 3/4s of the chopped herb, chilli, lemon juice, olive oil, ground pepper, and salt to make a marinade.
  3. Marinate the fish with the above marinade. Make sure that the marinade is added to the slits that were made in the fish.
  4. Leave it aside for about 15-20 minutes.
  5. Heat a grill.
  6. Place the fish in the big oven-proof dish.
  7. Brush the top of the fish with plenty of olive oil.
  8. Place the dish under the grill.
  9. Grill on one side for about 5-6 minutes.
  10. Take the dish out of the oven and turn over the fish; Brush the top of the fish with olive oil again.
  11. Grill on the other side for about 5-6 minutes.
  12. Remove the fish from grill.
  13. Place them on a serving dish.
  14. Garnish with the remaining herb.

Notes : If the fish is smaller, reduce the grilling time by 1-2 minutes. If the fish weighs more than 300g each, then increase the grilling time by 2-3 minutes.
